Description
Sazanami's three core shapes, sold as one set: the workhorse Gyuto, the straight-edge Nakiri and the small-jobs Petty, matched in steel and grip from first knife to last.
Features
• The Gyuto and Nakiri split rocking and straight cuts, while the Petty handles garlic, fruit and detail work.
• The same edge geometry runs across all three, so the feel at the board never changes knife to knife.
• Three shapes chosen for coverage, not for padding out a set.
• Every blade runs a VG-10 core hardened to 60 ±2 HRC, so edge feel never changes across the trio.
• The same 67-layer Damascus cladding wraps all three, waterline figure on every flank.
• Weight varies knife to knife, though the whole trio stays light enough for a long block session.
Abalone set into an octagonal wa grip throughout, catching light differently on every knife.
30-day returns on unused knives. Free shipping within the US, delivered in 2 to 4 weeks.

Care & Maintenance
Hand wash, never the dishwasher. Wash the blade by hand with warm water and a little soap, then dry it straight away with a soft cloth. The dishwasher dulls the edge and damages the handle.
Cut on wood or plastic. Use a wooden or plastic board. Glass, stone, granite, and ceramic will chip a fine edge.
Hone often, sharpen rarely. A few passes on a honing rod every week or two keeps the edge true. When it finally needs sharpening, a whetstone or a professional knife sharpener restores it.
Store it safely. Keep the knife on a magnetic strip, in a saya, or in a block, not loose in a drawer where the edge can knock against other tools.
Keep it dry. Never leave the knife to soak or sit wet in the sink. A drop of food-safe oil before long storage protects both the steel and the Damascus pattern.

What Sets Our Blades Apart
Every knife pairs a hard VG-10 core with 67 layers of Damascus steel, made to cut cleanly and hold its edge.
HOSHIGANE
Store-Bought Knives
STEEL & BUILD
- 67 layers of Damascus steel clad over a VG‑10 core, hardened to 60 ±2 HRC.
- Often a single piece of softer stainless steel.
BLADE GEOMETRY
- A Honbazuke-finished edge, close to 15° per side, for clean, precise cuts.
- Often a wider edge angle that takes more force to cut.
HANDLE & GRIP
- An octagonal wa handle that sits light and secure in the hand.
- Often a heavy bolster that tires the hand on long prep.
STAYING POWER
- The hard VG‑10 core holds its edge well between sharpenings.
- Softer steel that needs sharpening more often.
DAMASCUS PATTERN
- The suminagashi pattern comes from the layered steel itself, so no two blades look the same.
- Plain steel, or a pattern etched onto the surface.
DELIVERY & RETURNS
- Free shipping within the US and 30-day returns on unused knives.
- Shipping fees and return terms vary by store.
